Grain-free Peanut Butter Cookie

If you love dessert, but you also love to eat clean then you’re going to enjoy these peanut butter cookies.

They’re super simple to make and they’re full of protein so don’t be scared to grab for one early in the morning after that a.m. workout!

So go ahead and preheat that oven to 350 and let’s get baking!

All you need for this recipe is:

1 cup of all natural unsweetened nut butter (you can use sweetened, but I wanted to cut back on the sugar)

2 scoops of your choice of protein powder my absolute favorite is perfect fit vanilla

1 tablespoon of coconut/palm sugar (1/4 cup of you would like it sweeter)

1 teaspoon of pure vanilla extract

Plant based milk (need by bases)

Okay so first off place your nut butter into a bowl and mix in your protein powder. Toss in your coconut sugar and mix until well combined. Add in your vanilla and mix some more. Depending on the nut butter you choose to use your mixture might be too crumbly and that’s okay. Just add in 1 tablespoon of your plant based milk at a time until you’ve reached a dough like consistency.

Spay a cookie sheet with coconut oil then begin to roll your dough into little balls this recipe should make about cookies 12 depending on the size you make them.

Go ahead and place them on your cookie sheet a few inches apart then take a fork and gently push down in one direction then again in the other direction to make a crisscross design on your cookie.

Pop your cookies into the oven for 12 mins then let them cool for 5mins before digging in!
