Care for a quick and tasty gourmet dessert?
Hello! It’s Amy from My Name Is Snickerdoodle and am incredibly excited to be sharing my creative recipe with you all!
Is it just me or do you think it’s crazy to think the lazy days of summer are coming to an end? I’m not ready to let it go just yet and am making these Easy Berry Cones to hold onto this season a little longer.
I’m a huge believer that summer recipes need to be super easy and come together in minutes. No one wants to be in a hot kitchen when there is some sunbathing poolside to do. This dessert totally fits into that category!
Summer berries are in full season right now so feel free to use your favorites. I used fresh strawberries, blueberries and raspberries, but these would be just as amazing with blackberries, too. The only prep you need to do is hulling and dicing the strawberries. The berry mixture can be made ahead then spooned into each waffle cone right before you want to serve.
These are also sprinkled with a few mini chocolate chips which actually takes this fresh dessert over the top. It’s not overwhelming, but there is something about chocolate and fruit that I can’t resist!
Easy Berry Cones
8 oz Fresh Blueberries
8 oz Fresh Raspberries
12 oz Fresh Strawberries, Hulled and Diced
4-6 Medium Waffle Cones
1/2 Cup Mini Chocolate Chips
Whipped Cream, Optional
In a medium bowl, toss together berries.
Spoon berries into the waffle cones and fill to the top.
Sprinkle with mini chocolate chips and top with whipped cream.
