This week I’m going to feed your chocolate craving! It’s a holiday weekend so why not make it a little sweeter with some chocolate?
This is a super simple recipe and all you need is
Ingredients-Makes about 8 cups
- 1 bar of 70% or higher dark chocolate (the higher the coca percent the better)
- 1/4 cup of cashew butter (any type of nut butter is fine)
- 1/3 cup of blueberries (if you don’t have blueberries use another berry you have)
- A mini muffin pan
- mini liners are optional. *If you don’t have liners just spray your pan with a little coconut oil
First you’re going to melt down your chocolate. I used a Wilton’s chocolate melter for this so no additional oil was needed.
Next I took my chocolate and put about 1 teaspoon into each section. I gently coated the sides of the pan to form a wall for the cup. After that I placed my chocolate cups into the refrigerator to set. For about 5-10mins
While my cups were setting I placed my blueberries into a bowl and started to smash them up to form a jam. Similar to the raspberry chia seed jam I made last week only without chia seeds.
Once your chocolate cups are set take them out and scoop 1/2 teaspoon of cashew butter into each cup and then add 1/2 teaspoon of your smashed blueberry jam on top of that.
Now take the left over chocolate and cover the tops of your chocolate cups! Put them back I. The refrigerator to set. Once they’ve set you can pop them out, this is where using a liner comes in handy. If you didn’t use a liner let them sit out for about 5mins before gently loosen up your cup with a butter knife.
Since we used fresh blueberries and cashew butter these little guys need to stay in the refrigerator for safe keeping, but trust me they won’t be sticking around too long!
